PB&J Alternative

I like peanut butter and jelly for a snack, but not for a meal.  Too sweet.  I make pb&j occasionally when the children need a hefty snack.

One of the sandwiches we do on days we don't have leftovers is a broccoli melt.

Chop up broccoli in small pieces, saute it in some oil until it is barely tender. Add some herbs or garlic if you want. Pile the broccoli on bread, lay some cheese slices on top, and run under the broiler until the cheese has melted or, depending how hungry everyone is, the tops are browned.

To be super-quick, you could saute the broccoli ahead of time, even in a big batch for several lunches.

Here we ate our sandwiches with red beet eggs.

  1. I'm amazed you manage to get your children to eat broccoli, I used to try and disguise veg in all kinds of sneaky ways, it does look very appetising though.

Thanks for the comment on my blog.......I do seem to have succumbed to the christmas spirit early this year.

  2. Oh red beet eggs, how I miss you!! My Grammy used to serve them at Sunday dinners, just for me. Seeing your picture made me want to leap into your dining room and gobble them up. After saying please and thank you, of course.

  3. You always have great, balanced meal ideas!

And the sweet dress on your sweet it! The red shoes are perfect with it.

  4. Good way of serving broccoli! Shame the last of ours in the vege garden have finished.
My toddler will eat her veges with no fuss.. we do sometimes make up cool names for them though, like "broccoli trees" and "pea jewels" :)

  5. My entire family loves broccoli. We'll have to try this. Thanks for the idea!

I enjoy the conversation in the comments - thank you for that. I will answer your questions here in the comments. Please note that I don't want the world wide web to know my family's surnames and location.
