One of the sandwiches we do on days we don't have leftovers is a broccoli melt.
Chop up broccoli in small pieces, saute it in some oil until it is barely tender. Add some herbs or garlic if you want. Pile the broccoli on bread, lay some cheese slices on top, and run under the broiler until the cheese has melted or, depending how hungry everyone is, the tops are browned.
To be super-quick, you could saute the broccoli ahead of time, even in a big batch for several lunches.

I'm amazed you manage to get your children to eat broccoli, I used to try and disguise veg in all kinds of sneaky ways, it does look very appetising though.

Oh red beet eggs, how I miss you!! My Grammy used to serve them at Sunday dinners, just for me. Seeing your picture made me want to leap into your dining room and gobble them up. After saying please and thank you, of course.

Good way of serving broccoli! Shame the last of ours in the vege garden have finished.
My toddler will eat her veges with no fuss.. we do sometimes make up cool names for them though, like "broccoli trees" and "pea jewels" :)
