I love the tart bits of rhubarb in the sweet muffin. We ate them split with strawberry jam and a slice of cheese on the side . . . a great way to start the day.

Inspired by you, this morning I was making my menu list for the fridge. I'm going to serve the rhubarb muffins with soup one day. Now, come on! You know it's going to be good.
I just got home from a 4-H meeting with Sophia. She got her packets for her sewing and baking projects that she'd signed up for. She learned that her second year baking project is muffins. Wouldn't rhubarb muffins be a nice change of pace in a sea of blueberry?
Deanna Beth, I totally agree! I use almost any chunks of fruit to make muffins, actually.
Rhubarb, rhubarb everywhere these days! With strawberry jam, these sound delicious... how lucky for me, I have the cookbook! I'll be trying these for sure.
