My Kitchen is Not a Creperie



I tried again with crepes, after being inspired here and here, but I just don't love crepes. I don't hate them, but I don't see the point. Why not just pancakes for breakfast or tortillas to roll stuff up in?



I made creamed spinach with hefty onions, feta and parmesan in the sauce, but still, the filling and the crepe were too similar in texture without enough flavor contrast. They were good, but I don't think I'll bother standing over my stove again. . .unless there's some crepe filling I'm missing? Should I try sweet?

I don't even know where to start.

The thought that any one should have *gasp* NEUTRAL feelings toward crepes just makes me want to weep---but I'll work on getting over it because you don't begrudge me my food preferences or non.

OK, so first--that spinach filling sounds delightful but perhaps more deliciously at home in a Spanakopita or in a Palestinian Qras b'sbanekh--the former uses phillo dough, the latter uses regular dough, does not have cheese, but does have sumak. Personally I prefer to eat both of those when other people have made them.

But back to crepes: Yes--try the sweet stuff!!
You, oh lover of Nutella, smear the stuff on, toss in some banana slices and enjoy. What else would you put that on? Bread? Gross.

There are many other variations---lemon juice and sugar/ strawberries/ strawberries and nutella etc.

But for the savory--pile in some shaved ham and a gooey cheese and Viola, you're standing on the sidewalk in Paris.

A French friend once served it with applesauce and cinnamon, but....that didn't pack quite the punch of the other stuff.

A, I'm catching a vision again! I see gooey brie and ham, maybe some mustard. . ..I see Nutella (duh! why didn't I think of that?!). . .I see straight up whipped cream with some strawberries . . . thank you, dear one. I'll report back!

I've never tried to make them. I do like their lightness with a yummy sweet inside, though! The savory ones are tasty, too (LaMadeleine is how I get a crepe every now and then... :-)

Oh man, I don't know where you live Beth, but when I lived in D.C. I loved La Madeleine. Not least because you could always stretch your budget by pigging out on their free bread and jam. I had a friend who often only ordered hot water and then squeezed lemon into it, so at least I wasn't that bad :)

In my opinion, crepes are another way to serve leftovers, similar to omelets

A, my great aunt used to order hot water and then put a creamer and a pack of sugar in it. She called it cream tea (Evie loves it too now), but I think it's a throwback to the Great Depression.

Taste is so subjective---no need to feel bad!

I'm not a crepes fan myself (!), but I do love the savory spinach version. They make great party food... At least in MY opinion.
