Spaghetti topped with pan-roasted asparagus, sunny-side-up egg, freshly ground pepper and salt, and lots of freshly grated Parmesan.
Break the egg to mix it up into a glorious sauce. Delicious.
And there was a green salad, too, with lettuce from our garden. We're eating it as fast as we can so we can plant green beans in that spot.
It's a lovely homecoming meal after a long day at my job.

ReplyDeleteAnon, it's flannel-backed vinyl, an outdoor tablecloth. I got it at TJMaxx for $5. We are protecting our table from the children :) Often I throw a regular cloth tablecloth right over top of it.

ReplyDeleteWhat my husband did (I asked him too), was microwave the asparagus for a little bit. Then he put it on a hot cast-iron griddle with a little oil. He turned it a few times until it was darkened and crispy in spots. Then he removed the asparagus and fried the eggs on the griddle.
But really, for this dish, you could steam, roast, or saute the asparagus. Or even use another green vegetable. . .
