Peas in Tomato Sauce


A lovely way to eat garden peas: in tomato sauce flavored with fresh snipped mint, garlic, and feta.  Here I used the final snow peas ("Mammoth Melting Sugar Peas") from our backyard garden.  And a quart of home canned tomatoes, simmered down.

We had a side of grilled zucchini, the summer's first for us.  My husband called it a zucchini filet.

  1. That sounds and looks amazing. We had some garden fresh snow peas for dinner last night ourselves. Nothing beat that freshness. I've never tried to grill a zucchini in that fashion, but I am sure going to have to try it out.

    I wonder what my boys (and husband) would say if I served a grilled filet of squash one night... maybe I should try it!

  4. What a delightful summer meal! We had roasted squash and zucchini last night, cut length wise and then sprinkled with Parmesan cheese.
